Roasted Cauliflower

Did you know that a single head of cauliflower can feed a whole family for a week?

I just made that up.  But I'm pretty sure it's possible.  I had no idea how much food a single head of cauliflower would make.  Turns out it's not a bad deal for $2.99.

Another great thing I learned with this recipe tumeric is a great spice!  

INGREDIENTS


1 head of cauliflower, sliced into large florets 
2 TBS olive oil
2 TBS minced garlic
1 TBS tumeric
1 TBS fresh ground black pepper  
DIRECTIONS



Pre-heat oven to 450 degrees.

Toss caulifloer in olive oil and minced garlic, then spread on foil-covered baking sheet.

Cook for 20 minutes, stirring every 5 minutes.  Add spices, stir and cook 5-10 minutes more until cauliflower is golden on tips.
  VERDICT

I can't say that I was overly excited for this side recipe.  I mean, it's cauliflower after all. But the addition of a new spice I had yet to try turned out to be a great addition to our spice cabinet.


It also turns cauliflower neon yellow, which is pretty cool.

Make this as a side dish with any meat dinner.  We had it with Asian-style tilapia!
