Slowcooker Indonesian Chicken

I have been rather hit or miss on cooking chicken in the crock pot.  Some things are moist, juicy, and delicious.  Other recipes create very dried out, bizarre tasting results.  So much so that Mark was not looking forward to this recipe. At all.

Just goes to show that putting off the inevitable is only never wise.  Or rewarding.  Because this was really good.

INGREDIENTS


enough chicken parts to feed a family of 4. The original tester used 17 frozen drummettes and wings, I used 3 thighs and 3 breasts cut into smaller pieces.
--2 T soy sauce
--2 chopped cloves of garlic
--1 1/2 t sesame oil
--1/4 t cayenne pepper
--1/3 cup peanut butter
--1/2 t ground ginger
--garnish with sesame seeds and lime wedges; optional

DIRECTIONS


Put the peanut butter into your crockpot and turn it to high so it can begin to melt.  Add the other sauce ingredients.  Stir to mix.

Add your chicken; toss to coat.


Cover and cook on low for 6-8 hours, or on high for 4-5. This is done when the chicken is cooked through and has reached desired tenderness. The longer you cook it, the more tender it will become, but it may fall off the bone if you cook too long.

Warning, Warning, Warning!  My chicken was not frozen, so I only put it on low for 5 hours.  I don't know why this recipe calls for it cooking so long, but watch it very carefully!

VERDICT

This was so good!  Just be careful with your cooking time, it needed nowhere near the time listed on the recipe.  Of course the meat the original tester used had bones it in, which I suppose will make a difference.
