Slow Cooker Honey Garlic Chicken

Well, since despite it being almost mid-April and it looking like this:

.... there is still plenty of time to cook good, hearty, warming meals.

I served this with hot rice and Roasted Cauliflower.   My husband is a little leary of this cauliflower recipe... he wonders if it's this neon yellow when cooked what it does to your stomach. 

INGREDIENTS

1 1/2 to 2 pounds boneless, skinless chicken thighs (4 or one thigh per family member)
3 garlic cloves, smashed and chopped
1 teaspoon dried basil
1/2 cup  soy sauce (La Choy or Tamari wheat-free are gluten free)
1/2 cup ketchup
1/3 cup honey

DIRECTIONS

Put the chicken into your cooker. In a small bowl, combine the rest of the ingredients, then pour evenly over the top.


Cook on low for 6 hours or high for 3-4


Serve with rice and steamed or roasted vegetables.




VERDICT

I used chicken breasts in this since I seem to be out of boneless, skinless chicken thighs.  Although fattier, I tend to like dark meat in the slowcooker better than white meat.  I think this recipe would really suit dark meat.  Regardless, this was still a great recipe.  Chicken cooked in the crockpot almost falls apart with a fork. 

Perfect over rice on a cold night!
