Fifty-Two Dinners

One new recipe a week for a year. That was the original goal set as a New Year's resolution way back in 2009.

It didn't happen. Nor did it happen in the following years.

But I have continued posting and striving to try one new recipe a week. Some months it happens. Some months it doesn't.

And along the way I've picked up readers from across the country who occasionally pop in to see what's cooking.

Clearly there are better food blogs than mine.

But if you're looking for quick, easy, and healthy with a dash of humor... I'm glad to share what I can.

Apple Cranberry Porkchops

INGREDIENTS
  • 2 boneless pork loin chops (1/2 inch thick and 5 ounces each)
  • 1/4 teaspoon dried thyme
  • 1/8 teaspoon salt
  • 1 tablespoon Crisco® Pure Olive Oil
  • 2/3 cup apple juice
  • 1 small apple, sliced
  • 2 tablespoons dried cherries or cranberries
  • 2 tablespoons chopped onion
  • 1 teaspoon cornstarch
  • 1 tablespoon cold waterI
INGREDIENTS

Sprinkle pork chops with thyme and salt. In a large skillet, cook pork in oil for 3-4 minutes on each side or until juices run clear. Remove and keep warm.

In the same skillet, combine apple juice, apple, cranberries and onion. Bring to a bowl.

In a small bowl, combine cornstarch and water until smooth, stir into skillet. Cook and stir for 1-2 minutes or until thickened. Spoon over pork.

VERDICT

Another easy, quick recipe. The pork still tastes dry to me, I hate when directions say to cook it dry with just some seasoning. It always tastes better to me when it cooks with the juices at the same time. I may try and rework this recipe to do that, but overall this was very good!

Crumb-coated Ranch Chicken

Yes, it is February and I'm just now posting a recipe. I told you I wasn't going to stick to the recipe a week theme this year. But let's not hold me to the promise that this blog's title implies, ok?


INGREDIENTS

2/3 cup ranch dressing

2 cups coarsely crushed corn flakes

1 TBS Italian seasoning

1 tsp garlic powder

4 boneless skinless chicken breasts

DIRECTIONS

Pour salad dressing into a shallow bowl. In another bowl, combine the cornflake crumbs, seasoning and garlic powder. Dip chicken into dressing, and then coat with crumb mixture.

Place in an ungreased shallow baking pan. Bake at 400 degrees for 30-35 minutes or until juices run clear.


VERDICT


Simple ingredients, easy to make, this recipe is a keeper, folks. Not bad for the first of the year, huh?
