Fifty-Two Dinners

One new recipe a week for a year. That was the original goal set as a New Year's resolution way back in 2009.

It didn't happen. Nor did it happen in the following years.

But I have continued posting and striving to try one new recipe a week. Some months it happens. Some months it doesn't.

And along the way I've picked up readers from across the country who occasionally pop in to see what's cooking.

Clearly there are better food blogs than mine.

But if you're looking for quick, easy, and healthy with a dash of humor... I'm glad to share what I can.

Brown Sugar and Balsamic Pork

Pork in the crock pot?  Let's give it a try!
INGREDIENTS
For the pork:
1 (2 pound) boneless pork tenderloin (or regular pork loin)
1 teaspoon ground sage
1/2 teaspoon salt
1/4 teaspoon pepper
1 clove garlic, crushed
1/2 cup water

For the Glaze:
1/2 cup brown sugar
1 tablespoon cornstarch
1/4 cup balsamic vinegar
1/2 cup water
2 tablespoons soy sauce


DIRECTIONS
Combine sage, salt, pepper and garlic. Rub over roast. Place in slow cooker with 1/2 cup water. Cook on low for 6-8 hours. 

About 1 hour before roast is done, combine ingredients for glaze in small sauce pan. Heat and stir until mixture thickens, it took about 5-10 minutes for mine to thicken. Brush roast with glaze 2 or 3 times during the last hour of cooking. 

Serve with remaining glaze on the side.


VERDICT
Watch your crock pot carefully!  After 3 hours on low this pork looked like it was cooking really fast. Two hours later it was done!  Depending on your crock pot and how full it is, the 6-8 hours can be WAY too long and completely dry out your dinner.
  
This was our first attempt to make pork in the crock pot- and it was tasty!
