Fifty-Two Dinners

One new recipe a week for a year. That was the original goal set as a New Year's resolution way back in 2009.

It didn't happen. Nor did it happen in the following years.

But I have continued posting and striving to try one new recipe a week. Some months it happens. Some months it doesn't.

And along the way I've picked up readers from across the country who occasionally pop in to see what's cooking.

Clearly there are better food blogs than mine.

But if you're looking for quick, easy, and healthy with a dash of humor... I'm glad to share what I can.

Beer chicken

INGREDIENTS
  • 2lbs skinless, boneless chicken breasts (or a mix of breasts and dark meat)
  • 1 bottle or can of your favorite beer
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1 tbsp dried oregano
  • 1/2 tsp black pepper

DIRECTIONS
Place all ingredients in the crock pot, and cook on high for 4-5 hrs, or low for 6-8 hrs. 

VERDICT

Low for 6 hours was too long- it was dry!  This doesn't mean it wasn't a good recipe- I just haven't mastered chicken in the crock pot yet.  I over cook it EVERY TIME!
