Fifty-Two Dinners

One new recipe a week for a year. That was the original goal set as a New Year's resolution way back in 2009.

It didn't happen. Nor did it happen in the following years.

But I have continued posting and striving to try one new recipe a week. Some months it happens. Some months it doesn't.

And along the way I've picked up readers from across the country who occasionally pop in to see what's cooking.

Clearly there are better food blogs than mine.

But if you're looking for quick, easy, and healthy with a dash of humor... I'm glad to share what I can.

Southwest Turkey Ranch Salad

I LOVE Wegman's salad station.  Walk up on any afternoon and they'll whip up a fresh salad right before your eyes.  Sure, the Caesar salad starts at 590 calories, but it's a salad, right?  Through the fall they were serving up a Southwest Turkey salad as well, and it was a lot healthier than the caesar.  I decided to make it on my own and save myself the $5.50 each time!

INGREDIENTS

4 oz turkey breast (I buy it extra-thick sliced from the deli- 98% fat free)
3 oz Yogurt Ranch Dressing (only 60 calories for 2 oz!)
2-3 cups romaine lettuce
1/2 cup chopped red pepper
2 TBS slivered almonds
1/8 cup Mexican Cheese

DIRECTIONS

Toss together.  Eat.  Pat yourself on the back for making one really unique salad (even if it is stolen from Wegmans).


VERDICT

Honestly I'm not a turkey fan.  I don't even eat it on Thanksgiving.  But it IS good for you, and disguised by all that yogurt ranch dressing it does taste like chicken!
