Fifty-Two Dinners

One new recipe a week for a year. That was the original goal set as a New Year's resolution way back in 2009.

It didn't happen. Nor did it happen in the following years.

But I have continued posting and striving to try one new recipe a week. Some months it happens. Some months it doesn't.

And along the way I've picked up readers from across the country who occasionally pop in to see what's cooking.

Clearly there are better food blogs than mine.

But if you're looking for quick, easy, and healthy with a dash of humor... I'm glad to share what I can.

Cheese and Pesto Naan Pizza

Wegman's is more than just a grocery store. It's a marketing powerhouse. Why else would I even consider buying a $4 package of strange, ethnic flat bread and making it into our dinner? Because Danny and his fancy cooks have made it look delicious, that's why.

INGREDIENTS

1 package garlic NAAN bread (if you have Wegman's, you've no doubt seen it. And if you don't... it's an ethnic flat bread- try the bread aisle?)
1 cup shredded Mozzarella Cheese
1/4 cup parmesan cheese
1/4 cup prepared pesto

DIRECTIONS

Place the two pieces of Naan bread on a baking sheet. Preheat oven to 350 degrees.

Spread pesto over bread. Top with mozzarella cheese, and then parmesan. Bake until edges of cheese are browned and pizza is warmed through.

VERDICT

This was very simple and easy to make- and it was delicious! I used pizza cheese instead of plain mozzarella, and the taste of the garlic naan added a lot of flavor too. Even the kids ate the "green pizza." The only downside was the size. One pizza is not filling enough for adults!
